Because of Ubuntu's philosophy of offering completely free software, some applications, libraries, and codecs aren’t included by default because they are regulated by patents and some countries pose licensing conflicts. So that users aren’t affected by these restrictions, Ubuntu offers a pack called Ubuntu Restricted Extras that includes all the applications and functions that should be installed on your system by default but aren’t because of the reasons explained earlier.

Being able to listen to MP3 files, watch videos in WV or QuickTime, enjoy Flash elements on websites you visit, have Microsoft fonts on your system, or run Java applications; is something that you'll only have if you add Ubuntu Restricted Extras.
